Drinking fresh vegetable juice is an excellent way to bump up the amount of raw foods in your diet and each glass is extremely nutrient-dense. Long ago, I read that it's best not to include more than one medium beet when you make a glass of juice. I believe this is because beets can be very cleansing, especially for the liver, and you don't want to go overboard with that. Double this recipe to make juice for two people.

2medium-large carrotspreferably organic, sliced to accommodate your juicer
1medium beetpreferably organic, sliced to accommodate your juicer
1/2medium green applepeeled if not organic, sliced to accommodate your juicer
1/2lemonpreferably organic
1small chunk of fresh gingerapproximately the size of your thumb
Instructions
Process ingredients through your juicer. Stir, then serve right away. Sip slowly, preferably a few minutes before a meal.
